Amontillado Tradición VORS first undergoes biological ageing under a layer of flor, a family of yeasts which spontaneously develops on top of the sherry. Following this, the sherry undergoes a period of oxidative ageing. In fact, undergoing these two different ageing processes gives the wine a distinct and particular character.
Subsequently, Amontillado Tradición VORS then undergoes another ageing process via the solera method, using containers from Jerez, El Puerto de Santa María and Sanlúcar de Barrameda. Only 4,000 bottles of the sherry are produced per year.
