Vineyard
Description:They are vineyards in high spots facing north located in Pago La Jara, El Palo, El Rosal, Villabuena del Puente and Valdefinjas.
Age of Vines: Vineyards over 45 years old.
Land: Fresh and sandy soils with clayey subsoils and gravel surfaces.
Climate: Continental climate with dry and hot summers, cold winters with a remarkable range of temperature
Production: Very low yields.
Elaboration
Harvesting: Manual and traditional harvest with selection in the vineyard and once in the winery using a selection table.
Winemaking: The malolactic fermentation takes place in new French oak barrels and the ageing takes place in new French oak barrels for 20 months.
Tasting Notes
Sight: An intense and dark cherry Picota Red wine with a purplish rim.
Smell: It is a fruit forward wine with lots of black fruit together with wood, mineral and coffee aromas.
Taste: On the palate it is a powerful and pulpy wine of fruity type with a very long and persistent finish.
Serving Temperature: 16ºC
Consumption: It is recommended decanting it at least 4 hours before serving it and it can be consumed from the first moment up to 15 years later.
Pairing: Red meat, game, roasts, stews and poultry.
